Meatloaf is such a homey comfort dish during the winter months; it always heats up the kitchen. It still reminds me of my folks’ place back in Michigan—coming in from outside as the snow fell and the evening got dark, the house cozy and warm.

This recipe is based on my Mom’s meatloaf, but I added some things of my own to make a meatless option—you’ll probably want a potato masher to do the mixing, but your hands work too!

For the loaf:
  • 1 pound Beyond Burger
  • ½ pound Impossible Sausage
  • ½ cup carrot, grated
  • 1 tbsp parsley, chopped
  • 4 tbsp onion, minced
  • ¼ tsp pepper
  • ¼ tsp dry mustard
  • 14.5-oz can diced tomatoes
  • ½ cup shredded Parmesan cheese
  • 1 large egg
  • 2 cups Italian bread crumbs
For the sauce:
  • ¼ cup ketchup
  • ¼ cup light brown sugar
  • a little dry mustard and ground nutmeg
Directions
  1. Preheat oven to 350°F. Spray glass dish with olive oil (9" × 11.5" or 9" × 13").

  2. Put burger & sausage in a large bowl, mash together.

    Add carrot, parsley, onion, pepper, mustard, diced tomatoes and cheese, mash into mixture.

    Mix the egg with a fork and pour in, mash into everything else in the bowl.

    Add the bread crumbs, mash in until thoroughly mixed together.

  3. Take the mixture and put it in the dish, use your hands to form a loaf.

    Mix up the sauce and put on top of the loaf.

  4. Cook for 1 hour, or until loaf registers 165°F on a meat thermometer.
